I purchased this to use primarily for slicing bread made in my bread maker, and also for slicing brisket and ham occasionally. I looked at the options available here on Amazon, read the reviews, pro and con, and finally settled on this one. I'm quite happy with the results. It works great to slice my break-maker loaves cleanly -- both thin (for sandwiches) and thicker (for a snack). And I've used it successfully for brisket twice, getting nice clean 1/8" - 1/4" thick slices. I noticed one thing with this knife: you have to let it slice without a lot of pressure. If you push down on it trying to make it slice faster, it WILL overheat! Also, that also seems to cause the blades to splay a bit, making the cuts not as clean as they should be. If you let the weight of knife itself do the slicing, it seems to slice very cleanly. It may take a few seconds longer, but you should have no problems with overheating. I've had this for about a month so far. If anything happens to change my rating, I'll edit and update my review. But for now, I'm quite happy with this.

Initial inspection: Everything as described. Fork seems bigger than pictured - sturdy too. Put the two blades together, plugged it it and pulled the trigger. Worked. Ergonomics are OK for my mid-size man's hand. Moderate/acceptable amount of noise. Can't wait to carve the Thanksgiving turkey. Update: I carved the Thanksgiving turkey. For the first time in our 35 year marriage my wife was impressed with my turkey carving.

I bought this JUST time for a Friendsgiving at our house. We had never cooked (or carved) a turkey on our own before and this thing was a lifesaver! SUPER sharp (which is great for the carving - not the washing). Comes with a case and a fork. Great deal!

Do not understand the negative reviews as this knife has been perfect for us. Used it to cut foam (crafter), huge turkey & 4 hams so far. Sharp blades & nice long cord. No we don't use everyday but then we would buy something much more heavy duty. When looking I thought - I don't need a case & now I even like that. No not particularly heavy duty but gives me a safe compact place to keep everything. Knife case is an absolute joke but when it breaks we will make one from cardboard. Definitely worth the price!

same as the one that i had for probably 12 years or longer until the switch stopped working and had to buy this new one, same great quality i like that this one came with a case to store it in and love the fork that came with it. Does anyone know who made the fork because i would like to purchase another one ?? : i expect the knife will last as long as my last one : if u never had a electric knife get this one and u will wonder how u did without one all this time. great product should not have to buy another one for a long time lol.

My new son in law loved using mine, which is at least 15 years old, and before Thanksgiving I bought him one for himself. He lOVES it. It is still nice and sharp, simple to use and cleans easily with it's own storage case. Can't beat it.

Nice lightweight electric knife. Purchased to replace a several-decades old (under $10 special) knife from Montgomery wards. I mostly just use the knife for turkey carving, ham cutting and occasional salami or log cutting. I hope this one lasts a least half as long as the old one . It's a nice set, not costly - just a good basic tool at a good price.

My wife purchased the Hamilton Beach 74250 Electric carving knife before Thanksgiving this year. It is our first electric knife, so my excitement level was pretty high. I was right to be excited. This knife made quick work of our 19lb turkey. The knife is powerful and very sharp. It was so much easier to use than our Henckel's, non-electric carving knife. My carving war of attrition became a one-sided massacre. It's even neater since you don't need to put so much muscle into securing the turkey while you cut. I am an electric carving knife noob, but my experience with the Hamilton Beach knife was trouble free. Handling the knife was very easy. Also, the removable blades and plastic body were easy to clean. I would highly recommend this knife for anyone charged with carving big birds in front of the family.

UPDATE: MARCH, 2016: The knife started acting up in the past few weeks (body getting hot and stopping dead a few times). It finally died on Easter Sunday. For me it lasted about 2 1/4 years (or just past the warranty). We used it fairly often so for the price I can't complain. Original review: For the price I did not expect too much, just an OK knife. This is a good knife. While it is unremarkable and really just a basic knife, it performs really well. The dimensions are as follows: Blades: 9" when mounted (about 12" overall) Knife body: about 10" long. Approximately 7 1/2" to 8" around, where you hold it for use. Electrical cord: Approx. 5 feet. The twin blades mount and eject easily. The knife is not heavy nor cumbersome. It fits well into my hand and my wife's - we are of average height and size. The trigger on the underside of the knife is easy to activate and use. The knife cuts smoothly through meats. I've used it on roast beef, turkey, chicken and pork roast without any problems. It cuts cleanly and does a nice job producing thick or thin slices of meat. It works effortlessly even on thick/dense meat. It also comes with a gray plastic hard case which holds the knife, blades in their own little compartment, and user guide. Hamilton Beach warrantees the product for 2 years. At this price, for what more can you ask?

I almost bought a Cuisinart set that cost roughly twice the price of this Hamilton Beach electric knife, but ultimately decided on this one because I liked that it had its own case for storage as well as a fork. I'm glad I bought this one! It works exceedingly well and stores easily in its box. Perfect for my small kitchen! So far I've used it exclusively on roasts and it slices through them like butter.
