I have a lot of knives but this santoku is my favorite knife of all time. I use it daily in the restaurant business and even after a year of hard use, it is still tge sharpest i have. In that year I probably sharpened it with a wet stone 3 or for times and steel honed it daily. It holds the sharpest blade that I have ever had. Because it's so sharp, I can speed chop things like peppers tomatoes and onions without worrying if the blade will slip into my finger ( dull knives do this ). I don't care if it's made to be a vegetable knife, I use it for everything. Today I diced 10 onions, then trimmed the fat off a whole cooked/cooled prime rib with ease. Then it was my line knife during lunch rush. I highly recommend it :)

Have had this knife for a few years now. This is definitely my go to knife in the kitchen for most vegetables and meats. The size is very manueverable and the edge stays very sharp. The over all knife is well balanced in my hands, although my mother and sister do prefer lighter tools, and felt like a dream to work with.

Pretty good knife. I keep it honed with a Spyderco Sharpmaker set to the 15-degree angle and it keeps an edge very well. I find that it does especially well with harder vegetables. It's great with meats, fruit, herbs, and pretty much everything else I've thrown at it, but for some reason, I really notice it when cutting carrots, potatoes, radishes, etc. Slicing a large carrot or a potato into chunks, I just expect a certain amount of resistance, not much, but some, and this knife behaves as if there's nothing there. On another note, when I was still deciding, I read a few reviews saying the handle was slippery, which almost turned me off the knife. After working with it for a while, I now think those reviews were fake. Nobody could hold this knife in their hand and think "oh, slippery". The pictures make it look slippery (shiny!), and the actual handle has a nice smooth polish and seems like it SHOULD be slippery, but it just isn't - when I grip it, it grips back. Even wet or with various food juices on my hands, the grip is 100% reliable. It seems weird to say so for something so smooth, but it holds in the hand like it was wrapped in sandpaper. My first Shun, but I suspect I'll be buying more.

We recently bought a new set of Wusthofs and the Shun is even sharper. The handle is shaped to fit right handers and I was uncertain until I started to use it. This is becoming the favorite knife. I am not completely sold on the hollow ground design as vegetables still adhere to the blade, maybe not as much. We like it so much we bought one as a Christmas gift for a relative, would buy this again.

This knife holds its edge really well. It's become my go to for almost all the prep I do. Really nice balance. Just don't put it in the dish washer.

We have a number of very nice Japanese knives, but no Shuns. Bought this one on impulse when it showed up on the Treasure Truck. Glad we did. Use it every day and the edge is holding well.

I heard a lot about Damascus knives being high maintenance and impractical for large volume prep, but so far I've been super pleased! Granted, I only use it for vegetables and herbs - don't even try to use it for proteins, it's not as effective as a chef knife and you wanna take care of this baby - but with a little love and a ceramic steel, it's kept its edge. I've been dicing onions and shredding cabbage just for the buttery feel of it! All in all, worth the price point if you're willing to use a santoku exclusively for its designed purpose. Lightweight, easy to handle (I've got tiny hands), beautiful, and most importantly functional.

I've had this knife for about a year now and am thrilled with it. In general, Shun knives are exceptionally sharp straight out of the box - and this Santoku is no exception. I do a fair amount of home cooking and have only had to do intermittent honing to keep it razor sharp. I've owned less expensive santoku knives before which all invariably dulled much faster or weren't as sharp in general. I'm quite happy with this as it seems like it will last me indefinitely. Good investment. Only knock I have is that the scallops don't do an amazing job of keeping some things from sticking to the blade - but that's such a subtle point that I wouldn't knock this down from 5 to 4 stars because of it.

This is my favorite knife of all time. I had an old one that my boyfriend dropped and broke the tip so when I saw this on the treasure truck I purchased it right away! Nothing else compares

It looks so good with its Damascus blade, I hardly dared to use it. I have a collection of fine Henckel knives as my go-to knives. Then a young nephew came who loves to cook and released it from incarceration in my drawer. It has been several months and I have not let go of it. It is sharp as a razor, cleans up in a snap, holds its edge, and a couple of strokes with a steel bring it back. I use it for everything, from slicing meat to peeling potatoes. A great tool, wonderful to work with.
