Mercer Culinary Genesis 6-Inch Forged Chef's Knife: FANTASTIC knife, super sharp right out of the box, arrived on time and perfectly priced for German steel! 6" is an excellent length, easy to handle around meats and fruits and veggies. I've used it on carrots, pork, potatoes, tomatoes, and onions to name a few. You won't regret buying this knife, it is all that and more. it fits into 'regular' width sized slots in knife blocks (does not nee the oversize widths made for knives like the 8" Chef knife or the Japanese Santoku) I still can't believe it was only $28, for a Mercer, German steel (if compared to other knifes, 6" or 8" Chefs, this knife should be in the $55 to $70 range)! Go figure, maybe it was mis-priced, don't know, don't care. All I know is it works perfectly for me and I'm so glad I found it and bought it.......

First off, let me say that I'm by no means a professional chef. But I do cook every day. I first started with a Cangshan knife and it was in the box being returned within the week. It was dull after 3 days of use. As for this knife, I received it three weeks ago. It has some great weight to it, very balanced and nicely heavy. Immediately out of the packing it was extremely sharp. I've had it three weeks now, using it almost every day twice a day and it cuts like the day I got it. I cut strawberries in the morning, and potatoes and chicken at night. It cuts uncooked chicken breast beautifully. You can literally lay it against the chicken and slice it open with no effort whatsoever. It cuts a potato with almost no pressure. While this may not be a $200 knife, I don't need a professional chef's knife. However, note that it is made with professionals in mind. Mercer is a culinary school and I even asked a chef about it before I got it and he told me it was a good knife. He didn't lie. It's well worth the $50 price tag.

I received this 6 inch chef knife yesterday 12-30-18. I gave used the k ife one time so far to cube a tomato for a salad. This knife is capable of making a tomato slice so thin you can see through it. The fit a finish are very good, blade grind is even, the bolster is slightly above cutting edge of blade so you can get a full cut on cutting board and it's super sharp. I can't think of anything else one could ask for on a culinary knife. What can I say it's a great product. I do like the smaller chef knife to use for food prep on smaller items, think chopped garlic, parsley, great for fresh herbs. I have 8 inch chef knives that I use for larger things and a large nakiri for things like whole heads of cabbage and butternut squash. Overall this would be a great addition to anyone's culinary knife set. I did not receive this item for free or a reduced price I exchange for review. It's simply a good quality product. This knife is a great value, but lets be honest, its not a 200 dollar quality knife. I prefer the santoku over the traditional chefs knife for my typical prep with meat, fruit and veggies. It has a good steel, came with a good edge and stays sharp fairly well, I'd say within 50% of my high dollar kitchen knives. It has a nice grip for my average hand size even when wet and is well balanced. You should not dish washer knives but I am guilty of doing it on occasion with no issues yet, which is something I don't have to feel guilty about at it's price point. I've sharpened it a couple times and the steel isn't hard to put an edge on. I've gifted several to people who aren't too into cooking any they have all been very well received. This is my top knife choice in the 40-80 dollar range for its good materials, good ergonomics and wide range of uses.

Culinary Genesis 3.5-Inch Paring Knife: The overall weight and balance feels good, handle feel is secure and size is about right, blade is very sharp, holds an edge reasonably well, does not rust (I only hand wash) etcetera as you would expect for a decent knife. One of the best things about this Genesis knife is the handle material and shape, it is very comfortable with no hard edges and importantly is just as grippy when wet as when dry. I can handle this safely in any condition. It also appears to be very durable, but only time will tell how this holds up long term.

I have a Tojiro DP which is an awesome cheaper alternative to Shun, made of VG-10 steel, razor sharp and holds an edge. It is great for slicing through vegetables, but the blade is slightly thin, so I wanted a second knife that is more sturdy. The Mercer Genesis chef knife complements it perfectly.... razor sharp, holds an edge, and much stiffer than the Tojiro. They make a great combo, however if I only had to choose one, I would get the Mercer due to its versatility. It is heavier and sturdier, so can handle the vegetables as well as tougher foods. My only concern is the handle.... although a nice non-slip grip, I'll have to see how long it holds up compared to a harder composite handle. Will update this review if I notice any durability issues with the handle.

I normally am the awful kind of amazon buyer who is too lazy to leave reviews, even if I like or love the item I receive. But I had to make some time to leave this review and tell anyone considering this purchase that this brand is in. friggin. credible. I bought the paring knife, and my expectations were average - " little knife, it'll help a bit with more detailed work..." This thing came out of the box sharp as a straight razor. It's amazing. I filleted a fish with it, I ninja'd my way through various fruit. I'm pretty sure I could carve an intricate image of the mona lisa into the side of a papaya, if I felt like it. It is truly magical. Buy it now and don't think twice.

I got the Short Bolster Forged Chef's Knife, 8 Inch. You really can't beat this knife in price and quality. I used to swear by Dalstrong blades, but after I tried Mercer, I replaced almost all my dalstrong blades with Mercer. The Mercer blade is much easier to sharpen on a whetstone, is sharp enough to cut through butter and looks great. From now on i'm only buying Mercer.

As I post this, there are 541 other reviews on this product. I have been using this little gem for a couple of weeks. I would not have bothered to leave a comment except for an exceptional event. Last evening I was cutting a backbone out of a chicken that I had half-a@@ed defrosted. My poultry shears were not helping much largely as the inside was frozen with the giblets so there was no underneath to easily access. Pulled out the chinese clever. Nope (leverage issue). I'm not sure what made me grab this knife, but I did. It made short order of the backbone removal--and frankly, I was astonished. Accordingly, I write a review. This knife is well-crafted, sharp, strong with just enough flex, and well balanced. The handle sticks in your hand (a chicken wet work is where one would appreciate such) and is comfortable. Though I used it for a purpose for which it was not intended, it turned out to be the right tool for the job where a longer blade was simply not going to work. I also caveat that kitchen knives, like carpenter's tools, are an extremely personal thing. To my hand and to my tastes, I'm going to enjoy using this knife for many, many years. P. S. 04/17/16 I have been using this knife to slash my french bread loaves....it is that sharp. I love this knife.

Excellent! This knife is easily on par with -or better than- the big name brands for a fraction of the price. Same steel as the big names, same shape, better handle material. Handle fits nicely in hand made of grippy, firm rubber that looks nice and should hold up well. Good balance, arrived sharp and needed no touch up. Cuts just like the big name it copies. At 6" this is a great sub for the 6" 'utility' knife that typically comes in a set (and is usually garbage). Good for all purpose prep and perfect size for an aspiring pre-teen or teen who cooks but might be intimidated by 8" /10" chef knife. My only complaint would be that the logo/ writing on the blade is too big. Minor issue for the value here.
