Sharp, flexible, and thin enough to find it point!
Love this knife. Makes making sushi and filleting fish a snap. Not super flexible, but very sharp, and the slight curve really helps you slice through fish. Additionally, the thin point makes it easy to find your way around bones on smaller fish like snappers. Handle feels great to hold like other shun knives.

I love this profile!
I butcher a lot of sub primals and at first, this blade profile was very strange to use and almost dangerous, but when you spend some time to learn the new shape, it really grows on you and keeps a nice sharp edge. Hey, it’s also much easier to sharpen than a traditional boning knife.

Super freaking sharp knife!
This is my 3rd Shun knife and 2nd in the Damascus/VG10 steel. These knives are incredibly sharp and they slice through most items with minimal to no pressure. I've used this knife to cut rib roast into rib-eye's, trim tenderloins, cut New York strips, fish, etc. The upward curve in the blade does take some getting used to but this has quickly become my favorite knife for cutting and slicing any type of meat.
