GREAT PAN!!
After ordering 4 of these Bellemain Madeleine Pans...I should write a review to state how wonderful they are. They bake the most beautiful Madeleines. Even when I accidently overcooked a batch...nothing stuck to the pan. I can double or triple the recipe and have enough pans not to wait too long for them to cool off. After buttering the first batch, no need to rebutter....nothing sticks. A small cookie scoop in the center is all you need...it spreads into the mold and they all bake perfectly. Beautiful, golden delicious cakes. I also ordered another pan, early on (Zenker). It worked well...but I left that one at my Parents home so I can make them Madeleines when visiting. I like my pans to be all the same. Highly recommend.

I wanted to bake madeleine after finally tasting them for the first time this year. There were many choices for pans but this one popped up as an Amazon choice so I went ahead and selected it. It turned out to be a great choice. I baked madeleines the week I received the pan and it worked out great. The pan was easy to use and the cakes popped right out without any problem. As for the madeleines they were cooked to perfection and so good and trust me I am not so great in the kitchen! I shared them with friends and the first comment was - could I make more! I know this pan will serve me well for baking madeleines for years to come. I already recommended this pan to friends - it's a must have.

Great for making Madeleine's!
This pan was great! My first time making Madeleine's. They came out great. The first batch I greased and floured the pan as per recipe instructions, they came out perfect. The second batch I just buttered the pan and they also came out perfect. I'll probably end up buying another pan soon. I recommend this pan to anyone who loves to bake.

Perfect Madeleines, no greasing or powdering needed
Thank you Perella's for your nonstick Madeleine pan. I have to say that I was skeptical at first. I wanted to oil and powder the pan before baking, but I decided to go ahead and test the pans without it. My madeleines came out perfectly. Thank you again, I'm very satisfied. I've attached pictures. I made strawberry madeleines. The picture of the pan was taken right after removing the madeleines. Clean up is vey easy. Loving my new pans.

I ordered two of these, and could not be more pleased. My madeleines turn out beautifully golden-brown and defined. They are a nice sized cake (not too small). Best part: the non-stick really is non-stick. I didn't even grease the pan and they slid out easily. I had been using silicone pans, but find that these pans produce a more classic looking end product, and are easier to use because they have structural integrity and don't require a cookie sheet underneath. This also means more even heat distribution, without a little brown spot on the top of the "shell" of my cakes. Highly recommended if you want beautiful, classic madeleines without fussy clean-up.

I bought this pan because I love Madeleines. This pan did exceed my expectations. It is of high quality and the Madeleines come out easy after baking, even without prior greasing of the pan. I definitely would buy a product from this supplier again. It is always great, when price and performance are as well in line as this product is!

Just what I wanted at an affordable price.
Just baked madeleines for the first time ever. The molds looked large, but they do indeed come out the standard size, which I wanted. Buttered but forgot to flour the pan. However, they slid out immediately. The metal seems a little thin to me. Maybe it's just because they're so shallow, but I'm storing them separately from other pans to prevent denting. As other reviewers have said, some sort of handles would be an improvement (so they're still stackable). The pans are so thin and slick, they are a little tricky to remove from the oven. Overall, I'm very happy to have found pans that perform well, probably as well as or better than more expensive pans. Even if you don't really want to spend money on another kitchen item with limited use, the low cost of these make it hard to pass up.

Honeymoon memories
This past Oct 10th I married my best friend and the love of my life. My wife and I honeymooned in the south of France. We stayed at La Mirande in Avignon. There, we had a chefs table dinner in a 300 year old kitchen in the basement of the hotel. Our dinner was full of life, happiness and delicious french food. Since we were in the kichten and I made sure that we sat next to the chef, I memorized each course and how it was made. The dessert was a Bosc roasted pear glazed in a red wine reduction, custard cream with pine nuts, and (of course) fresh hot madelines. This past thanksgiving, i could not think of a better way to share memories of our honeymoon than to recreate our favorite dessert. I made custard from scratch to the add to the whipped heavy cream, I went to my favorite produce store while and picked out the best pears i could find, I roasted the pears in cotes du Rhone châteaunuf du Pape 2013 and basted the pears until they were perfectly shining.. then came the madelines.... Madelines might seem easy to throw together, but to recreate such a profound moment in my life I needed it to be perfect. Thankfully this pan was very forgiving. I figured out there are certain steps one must take to match the french standard" i wont go over the recipe i used, but will help with the techniques that if not followed will give you vastly different results. * mix flour and butter together and apply to the pan prior to adding the mixture. The flour and butter muat go into the freezer 2-5 minutes before you add the mixture and cook in the oven. *brown your butter, madelines have a toasty butter taste to them. *convection oven for even heat, crisper edges and moistish inner layer. *serve right away..... like right way... as fast as you can... The difference between good and great are in the details... the madeline pan held up to many batches and i didnt have one stick but was able to obtain that crisp butter crust that i found in france... i hope to make it again soon... I hope you liked my moment, and when you try your next batch of madelines... be sure to not settle for just ok or good.. Research, practice, get everything perfect and the madelines will reward you :)

Great Quality Pan + Makes Beautiful Madeleines!
This pan works so beautifully! It has a lovely nonstick coating that even feels durable, not the matte kind that feels like it'll scratch up soon. Seemed a bit thin for a baking pan (it was a little tricky to get my thick oven mittens underneath afterwards), but so are madeleines, after all! Buttered my pan like other reviewers suggested, and my madeleines slipped out beautifully! Hope to perfect my recipe and use this for many, many more years to come.
