What a quality tool !! I'm no pro but I have handled many knives in every price range and I have to say this knife offers one of the best bangs for your buck out there. I read reviews for hours before making this purchase and to say the least I am tickled pink. Unboxing this rascal was a pleasure itself but when I took the handle in my hand it immediately felt like an extension of me. The blade came scary sharp and continues to hold an edge contrary to reviews I've read regarding its Rockwell rating. This knife is well balanced with the perfect amount of heft (for me anyway) that proves to provide a stable platform for chopping,dicing,slicing etc.. My opinion is that this knife is perfect for all the duties it is intended for wether you are a professional or a Youtube certified professional (i.e. home chef) this a great value and perfect addition to any cutlery set. Unless you have little tiny rat claws for hands this knife is one of the best I have handled at any price point and if do not prefer a European style knife well Dalstrong offers several options esp in the Japanese style..Just buy the damn thing it will not disappoint unless you are one these people who are overly and unjustifiably critical of everything in which case you should spend thousands on a cutlery you probably cannot wield anyway. I LOVE THIS KNIFE and I think you will too.

I'm a young chef, I've only been in professional business for about two years now with three years of culinary school behind me; so take everything I have with a grain of salt. I've been testing this knife for about a week now and I'll tell you, its been an absolute joy to use. I've usually been using it to prep for a breakfast shift (onions, half case of bell peppers, half box of mushrooms, tomatoes, etc). I only had to use a honing steel once on this knife for about a two hour prep session before I had to cut overripe tomatoes for omelettes. The only gripes I've had have with this knife is that the lamination on the absolutely stunning handle that came with my knife is about a half millimeter or less from being completely square with the tang of the knife on the top and bottom of the handle (or front and back depending on which way you look at it), and there is a slight defect with the lamination of the handle (about a 1 square millimeter or less spot) . It's not enough of a complaint to send this knife back since its one of the few knives I own that are perfectly balanced from it's tip to it's tang. And like I've said, I plan to make this knife my workhorse and main chef knife for work so I won't complain that it doesn't look the best (Though it does still looks amazing to be honest). I'm aiming for functionality, not perfection. And this knife definitely has the functionality and balance; definitely compared to the standard half-tang knife service knives I was using to prep before. I'm planning to slowly but surely replace all the knives in my kit to Dalstrong; I already have their Ravager cleaver, and I've already ordered a boning knife and a steel, and I'll be definitely ordering more knives in the future; whether its from the gladiator, phantom, or shogun series.

I'm a young upcoming chef. I have bought and used many knives in this price range. And no other knife can pick up a razor sharp edge like this one! It's made with high carbon German steel. Similar to wusthof and henckels. But for 3 times cheaper. I work at a scratch kitchen where everyday we prep and make stuff from scratch. Basically I'm using this knife about 3 to 4 hours daily non stop. And it has hold it's edge perfectly. I have swapped my knife roll with Dalstrong knives for the simple reason they are reliable and cheaper than it's competition yet they still perform as good as a $140 wusthof. I recommend building your knife kit with these knives. They are worth it.

This is an incredibly well-made knife, with great balance, excellent steel, at a REALLY GOOD price. If you're ready to take the next step up in your home cooking, or are starting to delve into the culinary world, you won't regret this purchase. Great food starts with the knife, and this one fits the bill exceptionally well. I wouldn't at all be surprised to see this in a chef's hand either. Very, very pleased. BE CAREFUL and read about proper knife skills or watch some instructional videos on YouTube, because this knife is razor sharp and you can do some serious damage to yourself if you rush into using a pro knife like this. I've also purchased the paring knife, and plan to complete the set over time as funds allow.

I work in a kitchen and literally cut, chop, dice, slice, and shave things all day long. I use this knife for 80% of all my cuts. First of all the grip is great and the weight of the knife feels really good if you like a heavier, and sturdier tool. It come sharp and he edge holds very well. I use my honing steel on it twice a shift and I haven't had to sharpen it on a stone yet. It's been about a two months of heavy usage. I also want to point out that I can use it on more delicate cuts too. Tonight I was making basil chiffonade, and was able to get very thin and beautiful cuts. (For those who don't know what chiffonade is, it is when you roll basil leaves together and cut them into very thin slices: typically used for garish) It also looks great. Just a very appealing knife. The wood handle with the gladiator engraving on the metal; it's just a good looking piece. I've gotten a lot of compliments. 5/5 would buy again

This knife is great!. You know my favorite part of this blade is the handle and how comfortable it is to hold. Its like and extension of ur arm. The packaging it comes in is by far the best I have ever seen. Comes with a magnetic sealed box, and a very hard plastic sheath. Super sharp! And a beautiful finish on the german steel blade. I have more exspensive blades. But this is just as sharp and to behonest way more comfortable to hold. It is a bit heavier then some but not to heavy or out of balance. Very nice craftsmanship. I spent days reading reviews anf finally settled on this knife. Then two days later bought there shogun series 8 inch blade as well very beautiful knife! If you are debating on a blade for under a 100 dollars with a 100 dollar plus feel. This is your knife!!

So, I bought this knife because I wanted high quality without the high price tag. I didn't want to invest hundreds on a knife but I did want quality. Dalstrong and many many customer reviews boasted of this knife being very good and I can now vouch for it as well. It truly is a very well made tool, indicative of good old German quality craftsmanship. Aside from it's spot on function as a great knife, it is very attractive in design. The box opening experience was greatly enhanced by the impressive packaging and presentation of their product. It added that extra flair and wow factor that makes it a perfect gift for someone special in your life. This know is a great buy and, do, believe the hype.

******Update 3/23/17**** I was giving this knife one star now I am giving them 5 because of great customer services. I contact Dalstrong the other day and asking for any solution on these rusty spots. Jessica, the rep from Dalstrong returned my email fairly quickly on the next day. We exchanged a few email and sent her the pictures and invoice from Amazon. To my surprised she sent me a brand new knife without any charge of it. Simply because they want to make it right. To a guy didn't expect that and only ask for solution on how to fix the spot; this was certainly GREAT customer service! Now they got me! I am thinking about purchasing another Dalstrong Chef knife - Shogun series. Because I know if anything happened to this knife they will back it as they promised! -------------------------------------------------------- I want to like/love this knife but it rust after a few months of daily usage. This knife is on a heavy side and very thick. Over the time, I got used to the size and thickness of knife. Just recently I found out the knife starting having rust. I used this knife everyday for cooking at home only and not a professional cook. Very disappoint this knife rust! Please see the pictures I included, not good for a knife called itself as high grade carbon steel.

I don't work in a professional kitchen, I just like to cook at home. Until I received this knife, I wasn't aware of how terrible the cheap, whatever-I-could-get-at-the-store knives I used before were. They felt mostly balanced, but a little off, and they had a hard time keeping an edge. The Dalstrong, so far (1 week), has proven superior in every way. I'm a big guy and this knife feels kind of big in hand. This isn't to say that it's unwieldy by any means. The handle has a lovely weight to it and the balance is perfect. Pinch grip right at the bolster feels just right - the extra heft of the handle feels gone. It's almost like the knife were just an extension of my hand. I've only used the knife a handful of times, but the edge is still sharp. With my previous "favorite knife," even after running over the honing steel it would still have difficulty cutting. The packaging is superb and really makes this knife feel like something special. It contains instructions for use and care, a polishing cloth, and a nice keychain with the Dalstrong logo. I've only experienced a few products with such elaborate packaging. It's nice to come across. I've been reading Anthony Bourdain's Kitchen Confidential and had tossed around the idea of getting a Global 8" chef's knife. I'm sure there will be some to say that it's a superior instrument, but I couldn't justify spending that much on a knife. If I were in a professional kitchen, then sure that would make more sense. Initially, spending what I spent on this was hard to justify, but I figured I'd treat myself (treat yo self!) and am glad I did.

Amazing knife. My main knife in the kitchen is a Chef's knife. Due to the good reviews this one got, my girlfriend purchased this one for me. I've even used it for mincing garlic, onions and other produce and I have to say this knife has been flawless. Great buy on her part! :) She did buy an electric sharpener for me to use to re-sharpen it. However, there were specific suggestions on what to use to sharpen, whetstone - #1000/#6000. We kept the electric sharpener to use for our other knives so not all was lost!
