GREAT CARVING KNIFE
We were very impressed with the quality and effectiveness of this knife. We had a great knife that we got from Echo back in the 70's but it finally just can't do the job anymore. It does have a serrated edge and it is hard to find someone to do a good job of sharpening such a knife. We will keep looking but in the meantime this is a great knife that can slice REALLY thin slices of roast beef. It comes in a very nice sheath that includes a button to keep it from falling out accidentally. GREAT PRODUCT.

I've had this knife a few months now and have carved a turkey, sliced home made bacon, sliced home made jerky, and brisket. It glides through everything like a light saber! I have given all my name brand knives to co-workers and am slowly building a Dalstrong collection because they are just a fantastic value. The customer service is fantastic as well. I had a concern about one of my other knives and they responded immediately, they very quickly addressed my concern and even went above and beyond with some additional customer service stuff. I'm only a home chef, but I use my knives a lot. So far the Shogun series has required nothing more than a quick strop every few weeks. No nicks in any of the blades and holding up fantastically.

Great knife - Super Sharp - Made Well
This knife is super. I carved 20 pounds of roast beef on Christmas and the knife in addition to working well looks great. I initially thought the knife may not be as sharp as my other carving knife, but I was pleasantly surprised to learn it is super sharp and worked great. The knife has a very nice sheath to protect the blade when not in use. I have more than 50 kitchen knives including some old carbon steel knives which I can hone to a sharp edge. This knife works as well as those. I recommend without reservation.

I am in love with this knife. It cuts through meat like butter. And it looks so cool. The storage sleeve (saya) is a must-have to protect that razor sharp edge when not in use. This is not a knife to just throw in a drawer without a cover. It's actually display-worthy in the kitchen.

Now I was a Chef/"Beef" Cutter for several years in an "Ale House". The Roast Beef (Steamship +45lbs), Ham and Roast Pork where all hand carver, so I've been using "slicer" knives for many years and have 4-5 in my knife collection. The Shogun Slicer/Carving knife "raises the bar" to a whole level ... maybe two or three levels!!! Now this knife is not as flexible as my smaller, thinner and less tall in the blade height slicers ... but it has an incredible balance to it, sharp as a razor and just slices through the meat so easily, smoothly, thinly, and w/o any effort. Just Freakin' AWESOME!!! Combined w/ my Shogun Cimitiar I will take on any cut of meat no matter how big or how thin the slice needs to be !!! Another knife for a lifetime ... from Dalstrong

It is so pleasing to find the quality is even better than I had hoped
I’m collecting a full set of the DALSTRONG Shogun Series kitchen knives. I’m not made of money so I had to be very picky with my choice. It is so pleasing to find the quality is even better than I had hoped! It is positively amazing what a difference quality blade makes! I especially like the texture of the hammered Damascus steel. It is smooth enough to be kept exceptionally clean but still has enough texture to keep wet foods from sticking when you cut them. The handle is exquisitely made and fits well in my hand. I can feel the exact angle of the blade and control it very easily. There is plenty of heft to balance the blade. A couple of strokes of the steel keeps it frighteningly sharp. This particular blade (12” Slicing / Carving Knife) gets used more than I thought it would. I always wanted a professional carving knife for use on the holiday turkey and ham but I found so many more uses for it! Anything you want precisely sliced is a dream with this blade. It was amazing when making jerky. Watermelon just dares you to make the next slice just that much more perfect than the last. Brisket sandwiches are actually fun to slice. The control I get from this blade is confidence inspiring! Overall, the blade has been an excellent investment and addition to my kitchen! I highly recommend this blade as well as the whole series!
