Came with a good edge, but can be improved with a whetstone, which I did. Attractive finish, good balance, and does an excellent job with poultry, which is what I tend to use this for. Whole turkeys, chicken, duck...a very good choice. For something like fish fillets, I'd choose something a little thinner with better flexibility in the blade. All in all, a great knife. Very happy with the quality for the price.

So, I finally got to use this awesome Filet knife today and it is another winner from Dalstrong . I am becoming slightly obsessed with their products and that is due to the sheer quality . It just doesn`t get any better than this . In my pre-Dalstrong life, I always bought mediocre products, I didn`t want to spend too much money, but I didn`t want the cheapest product either, but , if you use knives a lot, it really is worth it to bite that bullet and invest in some good quality items. This one is the Shogun series, really neat, ultra sharp, and the sheath has a little safety pin, to where it won`t fall off. All of their products come packaged extremely well and it feels like christmas unwrapping and opening the boxes. I am a Dalstrong fan for life now and I hope to be able to acquire a few more of their products. I never want to go back to dull blades and rip through meat or tear ripe tomatoes apart and squish them, I promise, it won`t happen if you use Dalstrong products!

There are many knife reviews that complain that the knife was not really sharp. Sharpness was one of my main requirements. I was not disappointed. Had I reason to, I could have shaved with this knife right out of the box. Incredibly sharp. After filleting about a dozen fish it remains very sharp. (My 2nd requirement.) I am very satisfied with this knife. Now I am looking for a similar knife that is "flexible" for taking the fish skin off. This one does ok, but I understand a flexible knife will do even better.

I have to admit, I was a little skeptical about all the "buzz" I have heard about this line of knives so it was time to check out these knives for myself. The filet knife was one of the Dalstrong Shogun series knives that I ordered. When I received this knife and the other two Dalstrong knives I ordered, I was quite pleased with quality of these knives. They really are very nice knives. So much so, I just ordered another filet knife and two more Shogun series knives. These are very well made knives and I am very happy I purchased them.

This Shogun Series, 6" Filet Knife, is another masterpiece from Dalstrong. It is, by far, the best knife I've ever used for deboning meats and chicken, as well as fileting fish. When butterflying chops and chicken breasts, the blade just glides through. Of course, this knife has the same high quality and superior beauty, as the rest of Dalstrong's knives. This filet knife is easily my new favorite, of the over a dozen Dalstrong knives, that I own. If you are considering adding this knife to your collection, I'm sure you will be more than pleased with your purchase.

I ended up completely replacing my German made Henckel knives, I had been using for over 30 years. I was tired of having to hit them with steel every time I used them plus the monthly sharpening. I have been extremely happy with these Dalstrong knives so far, after two months of daily use, I have yet to have to sharpen them, and they are still sharp enough to shave with. I did purchase an extra Paring knife, just to practice sharpening. I would recommend that anyone interested in these make certain to view youtube on how to properly sharpen Japanese knives, sharpening is a time consuming proposition that turns into a labor of love. They are a handsome set of knives that really catch the eye and draw your attention to them. The handles fit my hands perfectly and the balance is great. They are a solid well built piece of hardware, that I am sure will last the rest of my lifetime, as well as the next generations to inherit them. I would agree that the some of the extra items shipped with these knives is overkill and the lapel pins are just cheap junk that found the trash. The plastic sheath is very nice and as sharp as these knives are is almost a necessity for personal safety.

This is my 5th Shogun knive. ...I intend to purchase all of series.....I have been in the commercial fishing industry for over 30 yrs....need I say more.....still can't get over the quality of these pieces of culinary wizardry! !!!

After a few uses, I decided to give this beautifully well balanced knife a few swipes on my old 14 inch honing rod, ... well, to be honest with you, in all my life, I've never witnessed a blade so sharp, ...as a matter of fact, it became sharper than what It was out of the box, oh yeah, I would compare it to that of a fresh new razor blade (no exaggeration) ! Get it!

I originally bought the gladiator version of this knife over this one with the impression that a filet knife needs to be flexible. And maybe it does, but after cutting raw fish, and especially trying to skin it, I wasn't very impressed. Then I saw this knife make Ryky Tran's top list of kitchen knives, where he highly recommended it for fish and ribs. So I ordered it and have to say I agree with him. This knife arrived sharp enough to cut paper easily, and after a quick touch-up on the stone (the edge was sharp, but not very smooth) it cut through meat like no one's business. It has a great blend of long and agile - exactly what I imagine you'd want from a filet knife.
